Opals were created by Dr. Jaroslav Tupý, a Ukranian-born scientist in Prague, at the Institute of Experimental Botany in response to shortages in vitamin-C-producing fruits at the time of the Iron Curtain. Opals are a mix between Topaz and Golden Delicious. They don't brown and they can be grown without pesticides. They're fragrant and crisp. They're my favorite!
